Zucchini Bread

This seasonal favorite is a great way to use homegrown zucchini.  Moist and sweet, it's more like a cake or a muffin than a bread, but it's really good.

Ingredients:

3 c. grated zucchini
3 c. sugar
3 eggs
1 c. oil
3 c. flour
2 t. baking powder
1 t. baking soda
1 1/2 t. cinnamon
1/2 t. salt
1 c. nuts (optional)

 
Combine sugar, oil, and eggs.  Add dry ingredients.  Stir in grated zucchini.

Grease and lightly flour two loaf pans.  Divide batter evenly between the two loaf pans and bake at 350° for 1 hour.
