Fudge Brownies
These brownies have a great texture with just the right balance between chewy and cakey. It's a little strong on the chocolate flavor and a little bitter, but that may be the cocoa I used. In the future I might experiment with cutting back on the chocolate a little.
Ingredients:
1 1/3 c. flour
2 c. sugar
3/4 c. cocoa powder
1 t. baking powder
1/2 t. salt
2/3 c. vegetable oil
4 eggs, lightly beaten
2 t. vanilla
1 cup chopped walnuts, optional
Combine flour, sugar, cocoa, baking powder, and salt. In a separate bowl, combine oil, eggs, and vanilla. Combine wet and dry ingredients and mix until incorporated. Spread in a greased 13 x 9 in. baking pan. Sprinkle with nuts if desired. Bake at 350° for 20-25 minutes or until done.
