Banana Muffins
Ingredients:
1/3 c. shortening
2/3 c. sugar
2 eggs
1 3/4 c. flour
2 t. baking powder
1/2 t. salt
1/4 t baking soda
1 c. mashed ripe bananas
Cream shortening and sugar. Add eggs, beating well. Mix in 1 c. flour, baking powder, salt, and baking soda. Mix in mashed bananas and then remaining 3/4 flour.
Grease or paper line muffin tins. Fill 3/4 with batter. Bake at 400℉ for 15-20 minutes.
